Visiting Mike at LinkedIn

My buddy Mike recently made the move to startup-ville and began working at LinkedIn in Mountain View.

It's kinda funny because he gets to milk to perks of Google and LinkedIn because all of his friends are like a 3 minute walk on the Crittenden Campus but gets to be able to focus at work because he still doesn't really know anyone at LinkedIn.

The atmosphere is like how I remember Google about 5 years ago. Lots of catered food, bomb micro-kitchens and the overall small feeling. It was pretty cool.

Mike kept on going on about how everyone was excited about their Coke "Freestyle" machine. As he said, "It's cute how people get excited about the small things."

Papalote's Famous Salsas Hit Store Shelves Tomorrow

My Mexican Side that used to frequent this Mexican Burrito joint in the Mission (When I Lived Close) is very very excited that you can buy their Salsa (of which I'm sure laced with crack) at Whole Foods and other local markets! Thanks for the Tip 7x7!

Cookin': Turkey Breast Enchilada Casserole

I felt like cooking tonight after work. I ran to Safeway off 19th/Taraval to grab a couple of items I didn't have to create this imagined dish I had in my head.

I had some left over Turkey Breast from last week and I felt like Mexican. Why not whip up something delicious? A Turkey Breast Enchilada Casserole is what came to mind.

I took a mixture of Tomatillo/Avocado Salsa and Onion and marinated the leftover Turkey Breast. I had some canned Enchilada Sauce along with bought low-fat mexican cheese and corn tortillas.

I layered the casserole similar to how one would make a lasagna.

Layers: Enchilada Sauce to coat the dish so the tortillas don't stick, (1) Corn Tortillas, Turkey Mixture, a light amount of cheese, Enchilada Sauce and (2) (1) Corn Tortillas, Turkey Mixture, a light amount of cheese, Enchilada Sauce.

I baked for about 30 minutes at 375 degrees. The result was pretty tasty and took very little effort!

My girl, Elizabeth, gets married

I had the pleasure of attending Elizabeth and Charlie's wedding and reception on Saturday, November 13th, 2010. It was nothing less than spectacular. The wedding took place at the Memorial Church at Stanford and the reception was at the Legion of Honor in San Francisco. After talking with her about the details for about a year, it was nice to see the whole thing take place without a hitch. I recently got to visit them in Boston/Cambridge during my All You Can Jet trip.

It was my 3rd wedding of my adult life (btw, all have been my girlies.) I'm waiting for a guy pal to get married!
